Pot Roast

I recently had a day off in the middle of the week. Generally, any time off is something to celebrate these days, but having the day off on a Tuesday is kind of magical. There is no pressure to be anywhere and you don’t have to get all dressed up for brunch or…heck, even shower. Having a Tuesday off the perfect excuse to get things done around the house. I cleaned the apartment top to bottom, did FIVE loads of laundry, had time to run errands, and spent the day cooking. It was awesome. Really.
I knew I wanted to make a Sunday Dinner (since this was my weekend and all) and it just so happened that we had a beautiful beef chuck from Polyface Farms in the freezer, so I spent the day prepping for a Pot Roast. If you weren’t jealous of my day earlier, now you can be. -
Paleo Mocha Frappuccino

Holy moly, ladies and gents – this could very well be the mother-load. A Paleo Mocha Frappuccino. That’s right. You’re welcome in advance.
I love coffee. A lot. So much so that Santa brought me an amazing coffee maker for Christmas this year; there is just nothing better than starting your day off with coffee weather it is a hot or cold Cup of Joe. My dad started us off early, introducing my brothers and me to “cowboy coffee” which was really just a cup of milk and sugar with a dash of coffee, but we thought we were so cool to drink it with Daddy. He had this way of drinking coffee that I will never forget; cup in one hand, the other placed on his lower back, and as he sipped his coffee, he would smack his lips together and say “Ahhhh”. That was his moment, his start to the day. And as he took that fist sip from his mug, you could tell he was somewhere else entirely, even for just a moment. Who knows, maybe that’s why I enjoy it so much, it’s my way to get away while starting the day at the same time. Seems productive, don’t it?

Egg Muffins with Bacon, Asparagus, and Mushrooms

Sometimes, Mondays can be rough.
Wake up from a bad dream? Check.
Boyfriend have your car keys and you can’t leave for work? Check.
Rainy day on the food truck? Check.
Stepped on a cute, innocent bird, killing the poor thing? Check.
Like I said, sometimes, Mondays can be rough. But there are silver linings to even the cloudiest of days. Bad dreams end, boyfriends ride their bikes in the rain to return car keys, and lucky for you, you pre-made egg muffins to eat on the car-ride to work. You can’t do much about the bird; that just sucks.

Curry Roasted Cauliflower with Raisins and Sunflower Seeds

There is one part of my day, each day, that stresses me out beyond belief. I work for a food truck here in DC (AKA the coolest job in the world) but part of my job responsibilities include saving parking for the truck each morning. It’s chaos. Everyday. For areas where parking does not start until after rush hour, it’s a mad dash to get the best spot at exactly 9:30 a.m.; think an intense game of Steal the Bacon with 18 foot mammoth trucks going against my tiny 2003 Hyundai, Sweet Pea. I’ve gotten yelled at, rear ended, boxed out, and cut off; each day my heart races and palms get sweaty. It sucks. However, I have learned to be sweetly aggressive and use my pint sized car to maneuver the streets of DC in a way the big boys can’t.
On the bright side, once I park, I can rest easy. Today, I am sitting in beautiful Franklin Park; the sun is on my chest and I am noshing on delicious leftover cauliflower. Life is good (especially since I got the best spot on 13th Street today).

White Wine Sangria

Things are heating up here in DC, which is nice for strolling around Capitol Hill, but not so nice when you are cooking in the back of a food truck with the ovens on. It gets hot real fast. We came up with an awesome idea to sell “Spa Water” on the truck, essentially water infused with all sorts of goodies like cucumbers, mint, cantaloupe, etc.; a nice refreshment on a hot day. As my team and I slug Spa Water down in the hot box that is our food truck, we started dreaming of Adult Spa Water, aka Sangria, which we could drink once service was over.

Paleo Strawberry Frangipane with Coconut Whipped Cream

Spring has sprung in America’s Capital and holy moly is it beautiful. After a bitterly cold winter (with almost no snow to show for it) the sun is finally shining and the cherry blossoms are in full bloom. If you have never been to DC during peak season, it truly is spectacular; thousands of cherry and magnolia trees are in full bloom, turning the skyline soft pink for as far as the eye can see.
Noah and I recently took a trip to the Tidal Basin to play tourists for the day, and I literally gasped as we walked along the water, immediately entering my happy place. Spring is here and all is right in the world.
Not only does spring bring cherry trees, tulips and daffodils, but it also signifies that nature’s bounty is knocking on the door, and strawberries are some of the first to arrive to the party. After our trip to see the flowering trees, I was inspired to make a light, fresh dessert perfect for the season. Frangipane with fresh strawberries kept running though my head and I was determined to take this traditionally gluten-free dessert one step further and make it worthy of a caveman…but like, a ladylike caveman, with tea gloves and a nice hat. A caveman that brunches.

Paleo Maple Sweet Potato Muffins

Picture this: You’re home waiting for a package to be delivered that must be signed for. For your convenience, you are given a four-hour waiting period, but around hour two you desperately want (no, NEED) something sweet. You look around your apartment only to find sweet potatoes, walnuts, coconut flour, and maple syrup. While these ingredients may not cry out, “sweet treat” you are desperate and decide to take Tim Gunn’s advice to simply, “make it work”.
After a little tinkering, something glorious is created. That something is a Maple Sweet Potato Muffin, and while it is not overly sweet, it is the perfect combination of spices, nuts, and just a hint of sweetness. It’s the perfect treat to have while waiting for the mailman, as a breakfast on the go, or to curb your hunger while training. Because of it’s unprocessed ingredients, you feel much better eating these muffins than say, an entire bag of Reese’s Peanut Butter Cups like you may have wanted to do.
